Histamine is a chemical involved in the digestion (by being involved in the regulation of stomach acid), immune system, muscle contraction, and in your central nervous system. Furthermore, histamine is a neurotransmitter (a substance which conveys messages between the nervous system and the cells).
In healthy individuals, the ingestion and production of this type of compounds are balanced out by an enzyme called DAO - diamine oxidase that breaks down the histamines.
Histamine intolerance symptoms tend to appear right after consuming (usually within less than 2 hours) foods high in histamine. A common histamine reaction is hard to differentiate between the standard allergic response which includes - itchy eyes, wheezing, skin rash, inflamed stomach, itching, and hives. People experiencing histamine intolerance have considerable less adverse symptoms when avoiding foods which they know trigger these symptoms.
DAO - Diamine Oxidase blockers are - Mate, Black, and Green tea, Alcohol, and Energy drinks.
High histamine foods list include:
Alcohol - champagne, white wine, beer, vinegar;
Pickled or canned foods – sauerkrauts or soy sauce;
Dairy products - cheese (gouda, Roquefort, camembert, parmesan, cheddar, swiss), yogurt, kefir, and buttermilk;
Beans and pulses – soybeans, chickpeas, lentils, peanuts;
Foods which contain food additives;
Tomatoes and tomato products;
Smoked meat products – ham, salami, sausages;
Chocolates, cocoa, and other cocoa-based products.
Vinegar
Nuts – cashews, almonds, walnuts;
Old foods.
Fruits - prunes, pineapple, raisins, plums, strawberries and raspberries.
Low histamine foods list:
Grains: corn, rice, millet, oats, oat bran, quinoa, sorghum;
Fresh vegetables, except tomatoes, cabbage, and spinach;
Fruits - bananas, apples, figs, cantaloupe, grapes, grapefruit, kiwi, watermelon, honeydew, Lime, lemons, mangos, pears.
