The action of hydrochloric acid + pepsin on indigestible glutenin forms 6 kinds of opiates in the stomach. These opiates don't make you high—directly. Rather, they stimulate food cravings (carbohydrates). It is the consumption of these carbs that then give us the 'high'. That is why you see "wheat" as either the first or second ingredient of so many candy bars and treats. BTY, the three forms (types) of gliadin are responsible for celiac disease.Gliadin is totally non-digestable by humans—all humans.
