What is Guar Gum? Guar gum is a type of fiber from the seed of the guar plant. About 20% to 40% of the guar seed consists of galactomannan gum, that forms a thick gel when mixed with water.
Chemically, it is a galactomannan polymer containing the sugars galactose and mannose. Guar gum is more soluble than locust bean gum and is a better stabilizer, as it has more galactose branch points.
Uses
It is particularly useful in food manufacturing since it's soluble and able to absorb water, forming a gel which can thicken and bind products. Actually, guar gum can hold approximately eight times the amount of water that cornstarch can.
Due to its binding properties, guar gum is now also used in the gas and oil industry as part of the process of hydraulic fracturing, or “hydrofracking.”
Moreover, it may protect against diabetes by slowing the rate of glucose absorption. For example, according to a 2012 study, guar gum is even more effective than the anti-diabetic drug Glibenclamide at lowering glycemia levels.
Also, there is substantial evidence that guar gum has a low digestibility as well as it swells in the digestive tract to provide satiety and fullness. Also, it may be useful in the treatment of irritable bowel syndrome, according to a 2005 study issued in Digestive Diseases and Sciences.
