Many people think baking soda and baking powder are interchangeable, however, they're absolutely not. Although they both help batters and doughs rise, they have different chemical makeups.
Both are considered to be raising agents, nevertheless, they are used under different conditions depending on the mix of other ingredients within the recipe.
Therefore, here is the difference between baking powder and baking soda:
Baking Soda
Baking soda is pure sodium bicarbonate. When it is combined with moisture and an acidic ingredient, the resulting chemical reaction produces bubbles of carbon dioxide that expand under oven temperatures, causing baked goods to rise or expand.
Baking soda is used in recipes that contain acidic ingredients, such as - brown sugar, buttermilk, lemon juice, yogurt, honey, vinegar, or chocolate (except Dutch process).
Shelf life - it has an indefinite shelf life.
Tip - using too much baking soda could result in a metallic taste in your baked goods.
Baking Powder
Baking powder is a solid mixture that is used as a chemical leavening agent in baked goods. It can be composed of a number of materials, but usually contains baking soda, cream of tartar, and cornstarch.
Most baking powders on the market are “double acting”, meaning that some leavening occurs the minute the baking powder gets wet, and the rest of the leavening occurs when it is heated.
You can make your own baking powder: simply mix two parts cream of tartar with one part bicarbonate of soda.
It has a neutral taste and is commonly used in recipes that have other neutral-tasting ingredients, such as milk.
Shelf life - it can last anywhere from 3 to 12 months, however, once it’s open, any humidity will make it go bad fast.
Tip - always remember that excess baking powder can create a bitter taste so add the right amount of powder to avoid that.
Substituting
You can substitute baking powder for baking soda in a recipe (you may need to increase the amount of baking powder though), but you can’t substitute baking soda for baking powder.
